TRUNG Huynh's farm is one of the few farms in Lam Dong that grows this special local Robusta cultivar, colloquial known as "Orange Robusta," while the rest of the province and country has been growing high-yielding varieties like TR4 or TR9. The previous owner (before Huynh's family took over) had worked at a coffee research institution. He collected various samples to test out on the land, and this orange cultivar stood out. The Brix level could reach 26%; even as natural processed coffees these cherries produce balance acidity, and floral aromas reminiscent of strawberry, which is distinct from Robusta.
We commisioned Huynh's family from Di Linh to pick out only ripe cherries from orange cultivar trees, before dry fermenting these for 2 days in plastic bags. These cherries were washed with clean water and dried on raised beds for in the shade 25 days. Light-roast robusta recommended for espresso.
